Pioppino mushrooms, also known as Black Poplar mushrooms or Poplar Fieldcap mushrooms have an earthy, nutty flavour that’s slightly sweet with some peppery notes. They are delicious in soups, stir-fries, risottos and pasta dishes, and their intense flavour goes well with game and red meat. Some say it has a 'pork-like' flavour!

 

They are particularly popular mushrooms in Southern Europe and Asia. Italian dishes incorporate them into risotto, pasta and meat dishes.  Asian cooking incorporates the Pioppino mushroom into dishes like soups, stews, hot pots and stir-fries.

 

Cyclocybe aegerita (Cyclone cylindracea) is known colloquially as Pioppino, Black Poplar mushroom, Poplar Fieldcap, Tea Tree Mushroom in China and Yanagi-matsutake in Japan, and goes by many popular and scientific names.

 

It is thought to be one of the first mushrooms cultivated in Europe and is described by both ancient philosophers Pliny the Elder and Aristotle. Although not well known amongst foragers in the UK, this mushroom is highly prized in other European countries such as Italy, Spain, Portugal and France for its nutty flavour and crunch.
