- 40 wooden dowels inoculated with branched oyster (Pleurotus cornucopiae) mycelium- 25g of wax to seal the log once the dowels have been inserted

*Please Note: This kit includes dowels colonised with your chosen mushroom species. However, you'll need to source a fresh-cut hardwood log (no older than 6 weeks). If you don't have a local tree surgeon, we recommend Hanging Wood. Their sustainably harvested logs come from copparded trees from their managed woodlands in the North Downs, where trees are cut at the stem, leaving the root to regrow new stems every 5–10 years.

The Branched Oyster mushroom (Pleurotus cornucopiae) is known for its elegant, cream to pale yellow caps and distinctive goblet shape. Its species name, meaning "of the Cornucopia" (horn of plenty), likely refers to the abundant, horn-shaped clusters of mushrooms it produces.
This particular strain features bright, cheerful yellow caps that are eye-catching and beautiful. Native to the UK, it can be found in the wild from late spring through autumn, growing on stumps and fallen trunks of oak, beech, elm, and other deciduous trees.
Branched Oyster mushrooms have a rich, earthy flavour with subtle seafood notes and a firm, meaty texture, making them a versatile addition to various dishes.
Cooking Tips: With their earthy flavours and firm texture, the caps of these mushrooms are great in Asian-style soups or simply sautéed with garlic on toast. The flavour has mild notes reminiscent of seafood and combined with its meaty texture, it would make a good vegan substitute for monk fish. When chopped, the stems from the large mushrooms make a great vegan substitute for mince in anything from spaghetti bolognese to homemade sausages.
