The Pholiota adiposa, commonly known as the Speckled Chestnut or Golden Scalycap Mushroom, is a fascinating species found primarily in temperate forests in Europe, North America, and Asia growing on various beech species, poplar, and willow trees. Ecologically, it plays a crucial role in breaking down organic material, recycling nutrients back into the soil, and supporting forest health. Its distinctive speckled orange cap and robust stem make it easily recognisable.

 

Cooking Tips: In Japan P. adiposa  are known as Numerisugitake and have been enjoyed for centuries. Cooking with Speckled Chestnut is just now making headway into the western world. They have a nutty, slightly sweet flavor with a lovely texture and stay firm when cooked. When pan-fried quickly under high heat Chestnut mushrooms best retain their firm and crunchy texture. They work particularly well with a variety of Japanese-inspied dishes and are a great addition to miso soups and ramen. Their long, firm stems are tender and edible.
