The Tarragon Oyster mushroom (Pleurotus eunosmus) is a rare species, believed to be found only in the British Isles and not commercially cultivated. This oyster mushroom species is prized for its herbaceous aroma and flavour, which is reminiscent of fresh tarragon, making it a standout variety for culinary use.
This mushroom is usually seen in the spring and summer, making it a good one for cultivation in the warmer months. This native species grows best outdoors, but it can also be grown indoors.
Cooking Tips:
With its herby, anise-like flavour and tender texture, the Tarragon Oyster mushroom pairs beautifully with poultry, fish, or creamy pasta dishes. The caps are delicious when pan-fried with butter and thyme, while the stems, when finely chopped, add a savoury depth to soups, risottos, or grain dishes.
